it’s cold again…how about some soup?

well.  that was some interesting weather we had here.  not sure where you are from dear reader…but up here in northern ohio, we had a bit of spring fever yesterday.  it was warm.  like 60ish warm and the sun was out and the breeze wasn’t too bad.  i decided it would be a great idea to meet a friend at the zoo.  i figured most people would be in their yards getting christmas lights down, riding bikes and scooters, or just taking walks.  well.  786,985 other people also thought it was a great idea to go to the zoo.  we had quite a bit of company.  anywho….

we like to make soup in the winter.  i have a close relationship with my crock pot (may it rest in peace…it cracked!  but i have already replaced it with the ninja…i will keep you posted how this relationship progresses).  my husband really likes soup and our oldest daughter is a fan too.  i have to keep it fairly simple and chunky so i can make it not so soup-ish for the little two.

we sometimes do a big meat purchase at costco.  on the advice of some friends, we purchased a food saver so i can break the big packages up into a single meal for us.  since i had a whole cow of beef stew meat to break up and save, i decided to make one of our favorites, beef soup.

depending on your crock pot  this needs to cook 8-10 hours on low or 4-5 hours on high.

about 1 lb boneless beef chuck (or stew meat) cubed

1 Tbl cooking oil

2 14oz cans diced tomatoes – undrained

1 C water

3 med sliced carrots

2 small potatoes cut into 1/2″ cubes

1 C chopped onion

1 tea salt

1/2 tea crushed thyme

1/2 C frozen peas (i always forget the peas and it still tastes good.  i love peas but by the time dinner is ready my mind has been overworked and i easily forget things)  steps:

brown the meat in the oil.  add meat and all other ingredients to the slow cooker except the peas (see why i forget them?) add peas about 15 mins before ready to serve.

that’s it!

it’s really yummy and really easy.  pair it with a homemade loaf of bread…and you will be very loved by your family (or friends, or cats, or whomever you decide to make it for!)
