Superbowl Sunday…the food

If you haven’t heard Superbowl XLVII is this sunday, it’s San Francisco 49ers versus Baltimore Ravens and the half-time show is Beyonce! Unknown

I like football, but like many of the game watchers this Sunday I will be viewing mostly for the great funny commercials and the food at the party…Oh and being a Clevelander, I do have to “boo” the Ravens.  So today, i am sharing a couple of my own appetizer recipes for you to enjoy while watching the game or the commercials 😉

First, artichoke and spinach dip that is easy, fast and a crowd pleaser!

Hot Artichoke and Spinach Dip 

Prep Time: 15 Minutes

Cook Time: 25 Minutes

Minutes Servings: 12

INGREDIENTS:
1 (8 ounce) package cream cheese, softened
1/4 cup mayonnaise
1/4 cup grated Parmesan cheese
1/4 cup grated Romano cheese
1 clove garlic, peeled and minced
1/2 teaspoon dried basil
1/4 teaspoon garlic salt
salt and pepper to taste
1 (14 ounce) can artichoke hearts, drained and chopped
1/2 cup frozen chopped spinach, thawed and drained
1/4 cup shredded mozzarella cheese
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a small baking dish.
2. In a medium bowl, mix together cream cheese, mayonnaise, Parmesan cheese, Romano cheese, garlic, basil, garlic salt, salt and pepper. Gently stir in artichoke hearts and spinach.
3. Transfer the mixture to the prepared baking dish. Top with mozzarella cheese. Bake in the preheated oven 25 minutes, until bubbly and lightly browned.

For those of us with new years’ resolutions for fit living 😉 here is a lighter options:

Spicy Bean Salsa

Prep Time: 10 Minutes
Ready In: 8 Hours 10 Minutes
Servings: 12

INGREDIENTS:

1 (15 ounce) can black-eyed peas
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can whole kernel corn, drained (I like the Mexicorn style)
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 (4 ounce) can diced jalapeno peppers
2 tbsp fresh Cilantro
1 (14.5 ounce) can diced tomatoes, drained
1 cup Italian-style salad dressing
1 minced garlic clove
2 tsp of light beer
sea salt to taste
DIRECTIONS:
1. In a medium bowl, combine black-eyed peas, black beans, corn, onion, green bell pepper, jalapeno peppers, cilantro and tomatoes. Season with Italian-style salad dressing, garlic, beer and sea salt; mix well. Cover, and refrigerate overnight to blend flavors.

Serve with tortilla chips!! YUM!
