If you haven’t heard Superbowl XLVII is this sunday, it’s San Francisco 49ers versus Baltimore Ravens and the half-time show is Beyonce!
I like football, but like many of the game watchers this Sunday I will be viewing mostly for the great funny commercials and the food at the party…Oh and being a Clevelander, I do have to “boo” the Ravens. So today, i am sharing a couple of my own appetizer recipes for you to enjoy while watching the game or the commercials 😉
First, artichoke and spinach dip that is easy, fast and a crowd pleaser!
Hot Artichoke and Spinach Dip
Prep Time: 15 Minutes
Cook Time: 25 Minutes
Minutes Servings: 12
1 (8 ounce) package cream cheese, softened
1/4 cup mayonnaise
1/4 cup grated Parmesan cheese
1/4 cup grated Romano cheese
1 clove garlic, peeled and minced
1/2 teaspoon dried basil

1/4 teaspoon garlic salt
salt and pepper to taste
1 (14 ounce) can artichoke hearts, drained and chopped
1/2 cup frozen chopped spinach, thawed and drained
1/4 cup shredded mozzarella cheese
|
1. | Preheat oven to 350 degrees F (175 degrees C). Lightly grease a small baking dish. |
2. | In a medium bowl, mix together cream cheese, mayonnaise, Parmesan cheese, Romano cheese, garlic, basil, garlic salt, salt and pepper. Gently stir in artichoke hearts and spinach. |
3. | Transfer the mixture to the prepared baking dish. Top with mozzarella cheese. Bake in the preheated oven 25 minutes, until bubbly and lightly browned. |
For those of us with new years’ resolutions for fit living 😉 here is a lighter options:
Spicy Bean Salsa
Prep Time: 10 Minutes

Ready In: 8 Hours 10 Minutes
Servings: 12
|
INGREDIENTS:
1 (15 ounce) can black-eyed peas
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can whole kernel corn, drained (I like the Mexicorn style)
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 (4 ounce) can diced jalapeno peppers
|
2 tbsp fresh Cilantro
1 (14.5 ounce) can diced tomatoes, drained
1 cup Italian-style salad dressing
1 minced garlic clove
2 tsp of light beer
sea salt to taste
|
1. | In a medium bowl, combine black-eyed peas, black beans, corn, onion, green bell pepper, jalapeno peppers, cilantro and tomatoes. Season with Italian-style salad dressing, garlic, beer and sea salt; mix well. Cover, and refrigerate overnight to blend flavors. |
Serve with tortilla chips!! YUM!
